A simple to make cake with a healthy feeling for a little less guilt and an extra ingredient to keep you going.

OVEN TEMPERATURE : Gas 4, 180 c, 350 f.
COOKING TIME : 40 – 45 mins
INGREDIENTS
For the cake …
4 oz carrots.
3 ½ oz S.R. flour.
2 oz brown sugar.
1 ½ oz All-bran – slightly crushed.
½ pkt choc chips.
1 egg.
2 ½ oz vegetable oil.
1 tblsp milk
For the topping …
1tblsp lemon juice.
2 oz icing sugar.
½ pkt choc chips.
METHOD
Grate the carrots finely. Zest and juice lemon.
Add the flour, sugar, all-bran, choc chips and lemon zest.
Beat the eggs, milk and oil together and stir into the mixture until evenly mixed.
Spread the mixture into the tin and bake until firm.
When cold, mix sieved icing sugar with lemon juice and spread over top. Decorate with remaining choc chips.
